From the links you will only need the .XLAM file. XLAM is the new XLA, the format for Excel add-ins.
You can download the example from Charlie Woodall from:
http://cid-c71180b441714fdc.skydrive.live.com/self.aspx/Excel/ExcelClassicUI.xlam
This will add a new tab to the ribbon with the classic Excel menu.

If you open the file in Excel 2007 you should see the changes in the menu.
If you want it loaded permanently you can activate them as add-in via the Excel add-ins option.
